Authentic Japanese Scallop Soup with Ramen Noodles

Japanese-inspired scallop soup with dashi broth, ramen noodles, shiitake mushrooms, and seared scallops.
Ingredients:
  • 1 (3 ounce) package instant ramen noodles (exclude seasoning packet)
  • 2.5 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese sweet wine)
  • 1.3333333730698 teaspoons dashi broth powder
  • 1 teaspoon rice vinegar
  • 5 shiitake mushrooms, sliced
  • 2 green onions, sliced
  • 1 teaspoon minced fresh ginger
  • 1 tablespoon butter
  • 8 scallops
Instructions:
  • 1. Boil a pot of water. Cook ramen until al dente, about 3 minutes, breaking up noodles as they soften. Drain and rinse under cold water. Serve noodles in two soup bowls.
  • As the ramen simmers, boil 2 1/2 cups water in a separate pot. Mix in soy sauce, mirin, dashi powder, and rice vinegar. Lower the heat and add mushrooms, green onions, and ginger. Let it simmer until the mushrooms are soft, about 3 to 5 minutes. Cover and set aside to keep warm.
  • In a skillet over medium-high heat, melt butter. Cook scallops until opaque in the middle and golden brown on the edges, about 2 minutes per side.
  • Divide the hot stock evenly between the bowls containing ramen, then add the scallops on top.
