Cozy Japanese miso soup with kombu, bonito flakes, and miso paste - a comforting and easy favorite!
Ingredients:
  • 4 cups water
  • 1 (4 inch) piece dashi kombu (dried kelp)
  • 0.5 cup bonito flakes
  • 0.5 (12 ounce) package tofu, cut into chunks
  • 1 teaspoon dried wakame
  • 3 tablespoons miso paste
  • 0.25 cup chopped green onions
Instructions:
  • Gently warm water in a large pot and place kombu in it until it starts to simmer. Add bonito flakes and take the dashi stock off the heat. Allow the dashi to sit for 5 minutes without covering it. Strain and set aside.
  • 1. Warm 3 1/2 cups dashi in a pot on medium heat. Add tofu and wakame, stir gently. Take out 1 cup of warm dashi, mix with miso paste in a small bowl. Pour the miso mixture back into the pot with dashi. Heat through and serve topped with chopped green onions.
