Authentic and delicious Chile Rellenos: Anaheim chiles stuffed with Mexican cheese, dipped in batter, and fried to golden perfection.
Ingredients:
  • 6 fresh Anaheim chile peppers
  • 1 (8 ounce) package queso asadero (white Mexican cheese), cut into 3/4-inch thick strips
  • 2 large eggs, separated
  • 1 teaspoon baking powder
  • 0.75 cup all-purpose flour
  • 1 cup vegetable shortening for frying
Instructions:
  • Prepare all ingredients.
  • Preheat the oven broiler and position the rack 6 inches below the heat source. Line a baking sheet with aluminum foil.
  • Arrange the peppers on the baking sheet and broil until the skins are blackened and blistered, approximately 10 minutes. Rotate the peppers regularly with tongs to char evenly. Transfer the blackened peppers to a bowl and tightly cover with plastic wrap for about 15 minutes to steam as they cool.
  • Peel the peppers and make a slit along the long side of each one to remove seeds and core.
  • Wash peppers thoroughly inside and out, then gently dry them with paper towels. Fill peppers with delicious strips of cheese.
  • Combine egg yolks and baking powder in a bowl, whisk until smooth.
  • Use an electric mixer to whip egg whites in a separate bowl until stiff peaks are achieved.
  • Incorporate beaten egg whites into the yolk mixture with care. Transfer flour to a separate shallow bowl.
  • Heat vegetable shortening in a skillet until melted. Coat stuffed peppers in flour, then egg mixture, and fry in hot shortening until golden brown and cheese is melted, about 5 minutes per side.
