Authentic Mexican Hot Sauce

Homemade spicy hot sauce with toasted chiles, vinegar, and garlic - perfect for tacos!
Ingredients:
  • 1 dried guajillo chile
  • 1 dried chile negro (pasilla) pepper
  • 2 dried New Mexico chile pods
  • 1.5 cups warm water
  • 2 cloves garlic, pressed
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon packed brown sugar
  • 1 teaspoon white vinegar
Instructions:
  • Prepare the guajillo, pasilla, and New Mexico chile pods by removing their stems and seeds.
  • Preheat a cast-iron skillet over medium heat. Toast the chile pods until lightly browned, about 2 to 3 minutes. Transfer them to a small bowl and cover with warm water. Let soak for about 40 minutes.
  • Strain the guajillo and New Mexico chiles from the water and scrape the pulp from the skin using a spoon. Discard the skins. Combine the guajillo and New Mexico chile pulp with the pasilla chile and the soaking water in a food processor. Blend until smooth. Add garlic, cumin, salt, brown sugar, and vinegar. Blend until the mixture is silky.
