Sicilian granita with Meyer lemon juice - a zesty and refreshing summer treat.
Ingredients:
  • 2 cups water
  • 1 cup freshly squeezed Meyer lemon juice
  • 5 lemon wheels
  • 2 tablespoons lemon zest
Instructions:
  • Combine water and sugar in a saucepan over medium heat, stirring until sugar dissolves without boiling. Remove from heat once the sugar has completely dissolved and the water is clear. Stir in lemon juice until well mixed. Chill in the refrigerator for about 30 minutes before using.
  • Transfer the mixture to a freezer-safe container with a secure lid. Place in the freezer until it starts to freeze around the edges while remaining slushy in the center, approximately 45 minutes.
  • Use a fork to gently stir the crystals from the edges of the granita mixture into the center until well mixed. Cover with the lid, return to the freezer, and chill until the granita is almost frozen, for an additional 30 to 40 minutes.
  • Gently mix with a fork as before, scraping off the crystals. Continue freezing and stirring with the fork 3 to 4 times until crystals are separated and the granita is light, dry, and fluffy.
  • Garnish each serving with half a lemon wheel and a sprinkle of fresh lemon zest.
