Fall Ratatouille with Smoked Sausage: A quick and delicious meal for the whole family, combining fresh veggies and savory sausage.
Ingredients:
  • 0.25 cup olive oil, divided
  • 1 (12 ounce) package Hillshire Farm® Smoked Sausage, cut into 1/4-inch slices
  • 2 cups chopped sweet potato
  • 2 cups chopped eggplant
  • 0.5 cup thinly sliced shallots
  • 2 cups chopped zucchini
  • 1 pint cherry tomatoes
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon black pepper
Instructions:
  • Preheat oven to a toasty 450 degrees F.
  • In a large oven-safe skillet over medium-high heat, warm 2 tablespoons of oil until shimmering. Add sausage and cook until it starts to brown, about 2-3 minutes. Use a slotted spoon to remove the sausage from the pan.
  • Place sweet potato in the pan and cook for 5-6 minutes, stirring often until lightly browned. Add the remaining 2 tablespoons of oil, along with eggplant and shallots. Cook for 4-5 minutes, continuing to stir frequently until slightly softened. Mix in zucchini, tomatoes, salt, pepper, and the browned sausage.
  • Roast in the preheated oven until tomatoes burst and vegetables are tender, about 18 to 20 minutes.
