Make a flavorful Ratatouille with fish using only six ingredients - a quick and easy meal option.
Ingredients:
  • 36.40 gm olive oil
  • 1 yellow capsicum, cut into 2cm pieces
  • 2 medium zucchini, halved lengthways, chopped
  • 1 small eggplant, cut into 2cm pieces
  • 410g can chopped tomatoes (with chilli and parsley)
  • 400g ling fish fillets, cut into 2.5cm pieces
Instructions:
  • In a large saucepan over medium-high heat, sauté capsicum, zucchini, and eggplant in oil, stirring frequently, until lightly browned, about 5 minutes.
  • Add fresh, juicy tomatoes and 1/2 cup of refreshing cold water to the pot. Cover and let it come to a gentle boil. Lower the heat to medium-low and simmer for 4 minutes until the veggies are perfectly tender. Gently introduce the fish into the mix and simmer for 3 more minutes until the fish is cooked to perfection. Enjoy!
