Fish with ratatouille

Indulge in flavorful white fish with vibrant ratatouille.
Ingredients:
  • 4 white fish fillets (bass, ling, snapper or blue-eye)
  • 250g cherry tomatoes, halved
  • 1 green capsicum, seeded and thinly sliced
  • 1 red capsicum, seeded and thinly sliced
  • 1 clove garlic, crushed
  • 1 onion, sliced
  • 30.00 ml torn basil
  • 3 tsp balsamic vinegar
Instructions:
  • In a large saucepan, heat 2 tablespoons of oil over medium-high heat. Sauté the onion, capsicums, and garlic for 4 minutes until just softened. Stir in the tomatoes and vinegar, cooking for 6-8 minutes until the mixture is pulpy. Remove from heat, fold in the basil, cover, and keep warm.
  • In a non-stick frying pan, heat 1 tablespoon of oil until shimmering. Cook the fish for 3 minutes on each side or until beautifully golden and cooked through. Serve alongside ratatouille.
