Arugula salad with avocado, cantaloupe, and cider vinaigrette.
Ingredients:
  • 2 tablespoons white sugar
  • 2 teaspoons paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon dry mustard powder
  • 3 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 pinch cayenne pepper
  • 0.75 cup vegetable oil
  • 6 cups baby arugula leaves
  • 0.25 cantaloupe - peeled, seeded, and cubed
  • 1 avocado - peeled, pitted, and cubed
  • 0.5 cup toasted slivered almonds
Instructions:
  • Combine the sugar, paprika, salt, mustard, vinegar, garlic, Worcestershire sauce, and cayenne pepper in a mixing bowl. Gradually pour in the vegetable oil while whisking vigorously until the dressing is smooth and velvety.
  • In a salad bowl, combine arugula leaves with cantaloupe and avocado pieces. Drizzle with dressing, then top with toasted almonds before serving.
