Delicious tri-color pasta salad with cucumbers, tomatoes, avocado, and zesty Italian dressing, perfect for potlucks and picnics.
Ingredients:
  • 1 (4 ounce) can sliced black olives
  • 1 (16 ounce) package tri-color rotini pasta
  • 2 tomatoes, seeded and diced
  • 2 cucumbers - peeled, seeded, and diced
  • 0.5 cup Italian dressing, or more to taste
  • 0.5 cup shredded Parmesan cheese
  • 1 pinch salt and ground black pepper to taste
  • 1 avocado, diced
  • 1 squeeze lemon juice
Instructions:
  • Bring a large pot of salted water to a boil, then cook rotini until al dente, about 8 minutes. Drain and cool for 10-15 minutes before using.
  • Combine the rotini pasta, tomatoes, cucumbers, olives, Italian dressing, Parmesan cheese, salt, and pepper in a large bowl. Chill for about 1 hour to blend the flavors.
  • Combine ripe avocado chunks with freshly squeezed lemon juice in a bowl, then gently fold them into the pasta salad just before serving.
