Elevate avocado salad with zesty Asian ginger dressing.
Ingredients:
  • 150g sugar snap peas, trimmed
  • 2 avocados, halved, stones removed, peeled, sliced
  • 100g mixed green salad leaves
  • 30.00 ml mirin
  • 30.00 ml Japanese rice vinegar (see note)
  • 1cm piece ginger, peeled, finely grated
  • 5.00 gm caster sugar
  • 1 tsp sesame oil
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Prepare the ginger dressing by combining mirin, rice vinegar, ginger, sugar, oils, and sesame seeds in a bowl. Whisk until thoroughly mixed and let it sit for 10 minutes.
  • While eagerly waiting, boil a saucepan of salted water until it reaches a rolling boil. Toss in sugar snap peas and cook for 2 to 3 minutes until they turn a vibrant green and reach desired tenderness. Drain and promptly cool them down with cold water, then gently pat them dry with paper towels.
  • Combine sugar snap peas, creamy avocado, and crisp salad leaves in a spacious bowl. Drizzle the dressing over the mixture and delicately toss to blend.
