Avocado-Citrus Salad with Swiss Chard

Vibrant salad with Swiss chard, citrus fruits, creamy avocado, red onion, crunchy cashews, and zesty citrus vinaigrette.
Ingredients:
  • 2 oranges
  • 1 grapefruit
  • 2 clementines
  • 0.33333334326744 cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon ground black pepper
  • 1 (5 ounce) package mixed salad greens
  • 3 cups Swiss chard, thinly sliced
  • 0.5 cup very thinly sliced red onion
  • 2 avocados - peeled, pitted, and diced
  • 0.5 cup roasted and salted cashews, coarsely chopped
Instructions:
  • Peel and remove pith from citrus fruit with a sharp knife. Section each fruit by cutting between the membrane and flesh, collecting 2 cups of fruit. Squeeze leftover membranes over a bowl to save juice.
  • In a screw top jar, blend 3 tablespoons of reserved fruit juice with olive oil, vinegar, honey, mustard, salt, and pepper. Seal the jar and shake well to mix.
  • Assemble mixed greens, Swiss chard, orange, grapefruit, and clementine segments, red onion, avocado, and cashews on a big platter. Drizzle the salad with dressing.
