Elevate apple pie with these irresistible apple pie cookies featuring brown sugar, nutmeg, and a homemade cinnamon glaze.
Ingredients:
  • 4 apples, peeled and diced into 1/4-inch cubes
  • 0.5 cup brown sugar
  • 0.25 cup white sugar
  • 1.5 teaspoons lemon juice
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.125 teaspoon ground cloves
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 4 sheets pie crust pastries
  • 1 teaspoon all-purpose flour
  • 0.75 cup confectioners' sugar
  • 1.5 tablespoons milk
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C).
  • In a saucepan over medium heat, melt butter. Add apples and toss until coated. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves. Cook and stir until apples soften and sugars melt, about 5 minutes. Bring to a boil.
  • In a bowl, mix water and cornstarch. Stir the cornstarch mixture into the apples and cook until thickened, approximately 5 minutes. Remove from heat and let cool completely for about 20 minutes.
  • Roll out 1 sheet of pie crust on a work surface, then spread half of the cooled apple mixture on top. Roll out another sheet of pie crust and cut into 1/2-inch wide strips. Weave the strips over the apple mixture to form a lattice top.
  • Use a round cookie cutter or drinking glass to cut out 12 rounds from the dough. Place the rounds on a baking sheet.
  • Bake in the preheated oven until the crust is golden brown and cooked through, approximately 20 minutes. Then transfer to a wire rack to cool for about 10 minutes.
  • Continue assembling the pies with the remaining pie crusts and apple mixture, then transfer them to a second baking sheet. Bake in the oven until the crust is cooked through and beautifully golden brown, approximately 20 minutes.
  • In a mixing bowl, whisk together confectioners' sugar and 1 teaspoon of cinnamon. Add 1 teaspoon of vanilla extract, then slowly pour in milk until you reach your preferred consistency. Drizzle the glaze over the cooled pies.
