Delicious lasagna rolls stuffed with cheesy turkey and mushroom goodness. A family favorite!
Ingredients:
  • cooking spray
  • 8 uncooked lasagna noodles
  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 (8 ounce) package sliced fresh mushrooms
  • 2 tablespoons Italian seasoning
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 (20 ounce) jar marinara sauce
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup ricotta cheese
  • 0.25 cup grated Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Coat a sizable baking dish with cooking spray.
  • 1. Boil a large pot of lightly salted water. 2. Cook lasagna in the boiling water, stirring occasionally, until al dente, about 8 minutes. 3. Drain and place pasta in a bowl of cold water.
  • In a large skillet over medium-high heat, sauté turkey, mushrooms, Italian seasoning, salt, and black pepper in olive oil until the turkey is beautifully browned.
  • Combine fresh spinach and aromatic garlic with the flavorful turkey mixture, gently stirring until everything is heated through, approximately 1 minute. Take it off the heat and let it cool down slightly.
  • Evenly coat the bottom of the prepared baking dish with 1/2 cup of marinara sauce.
  • Strain the lasagna noodles.
  • Blend 1/2 cup each of mozzarella cheese, ricotta cheese, and parmesan cheese into the turkey mixture until fully combined.
  • Evenly spread the turkey and cheese blend along the center of each lasagna noodle, leaving a 2-inch space at one end.
  • Roll the noodle tightly from the opposite end and place on the prepared baking dish with the seam side down. Continue rolling the rest of the noodles in the same way.
  • Smother the lasagna rolls with the remaining savory marinara sauce.
  • Bake in the preheated oven for 30-40 minutes, until the sauce is bubbly. Sprinkle 1 1/2 cups of mozzarella cheese over the rolls and bake again.
  • Bake until the cheese is gooey and bubbling, approximately 5 more minutes.
