Versatile bruschetta loaded with delicious artichokes - a must-try!
Ingredients:
  • 8 baby artichokes
  • 4 cloves of garlic
  • 1 lemon
  • olive oil
  • 1 bunch of fresh mint
  • 1 large loaf
  • 1 clove of garlic
  • extra virgin olive oil
Instructions:
  • Prepare the artichokes by peeling back to the pale leaves, halving them, and removing the chokes with a teaspoon. Place them in a pan with water, garlic cloves, and a squeeze of lemon juice. Cook until tender, then drain. Return artichokes to the pan with olive oil, fry for 4 minutes until golden, add lemon juice, mint, salt, and pepper. Reserve 4 halves, mash the rest with garlic. Cut the loaf, grill until crisp, rub with garlic, drizzle with olive oil, and sprinkle with salt. Spread mashed artichokes over bruschette, top with reserved artichoke halves.
