Sautéed baby bok choy topped with crunchy peanuts, cilantro, and flavorful Thai peanut sauce.
Ingredients:
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons water
  • 1 tablespoon Sriracha sauce
  • 1 medium lime, juiced
  • 1 (1 inch) piece fresh ginger root, minced
  • 2 medium heads baby bok choy, halved lengthwise, or more to taste
  • salt and freshly ground black pepper to taste
  • 0.25 cup chopped peanuts
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Combine peanut butter, soy sauce, water, Sriracha, lime juice, ginger, and garlic in a bowl, whisk until smooth, and let the flavors meld together.
  • In a large nonstick saute pan over medium-high heat, heat oil. Sear bok choy, cut-side down, until lightly browned, for about 3 to 4 minutes. Flip and cook for an additional 2 to 3 minutes until browned. Season with salt and pepper to taste.
  • Lay out the bok choy on a plate, then generously drizzle with the savory sauce. Finish by sprinkling crunchy peanuts and fresh cilantro on top.
