Baby brussels sprouts with garlic

Delicious pork chops with mashed potatoes and brussels sprouts - a satisfying family dinner.
Ingredients:
  • 300g baby brussels sprouts
  • 1 garlic clove, crushed
  • 2 anchovy fillets
  • 20g butter
  • 40.00 ml roughly chopped parsley
  • Cooked pork loin chops, to serve
  • Mashed potato, to serve
Instructions:
  • Boil brussels sprouts in a large saucepan for 5 minutes or until tender. Drain and return to the saucepan.
  • Heat oil in frying pan over medium heat. Add garlic and anchovies and cook for 1 minute, stirring until aromatic.
  • Combine the garlic mixture, butter, lemon juice, and parsley with the brussels sprouts, ensuring they are well coated. Serve alongside pork chops cooked for about 4 minutes on each side over medium heat and mashed potatoes.
