Baby Portobella Alfredo Sauce

Sauteed mushrooms, onions, and garlic blended into a rich, velvety pasta sauce.
Ingredients:
  • 10 cremini mushrooms, trimmed
  • 0.5 onion, cut into chunks
  • 4 cloves garlic
  • 4 tablespoons butter, divided
  • 2 tablespoons flour
  • 1 cup half-and-half
  • 0.75 cup shredded Italian cheese blend
  • salt and pepper to taste
Instructions:
  • Blend mushrooms, onion, and garlic until smooth. Melt butter in a saucepan over medium heat, then add the mushroom puree and cook until smooth.
  • In a separate saucepan, melt 2 more tablespoons of butter over medium heat. Gradually sprinkle flour into the melted butter, stirring continually. Whisk in half-and-half until the sauce is thick and smooth, about 4 to 5 minutes. Add the mushroom mixture and cook until slightly thickened, about 10 minutes. Stir in cheese and cook until melted, approximately 2 to 3 minutes. Season with salt and black pepper.
