Budget-friendly frittata with potatoes, leeks, and crispy bacon.
Ingredients:
  • 18.20 gm olive oil
  • 5 rashers rindless shortcut bacon, chopped
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 1 medium lady christl potato, peeled, thinly sliced
  • 6 eggs
  • 126.25 gm pure cream
  • 82.50 ml grated parmesan cheese
  • 2 garlic cloves, crushed
Instructions:
  • In a large frying pan over medium heat, heat oil. Add bacon and leek, stirring occasionally until bacon is golden, about 5 minutes. Mix in the potato and cook for an additional 3 minutes until it starts to brown.
  • First, heat up the grill to medium while you combine eggs, cream, cheese, and garlic in a jug. Season the mixture with salt and pepper. Pour the mixture into a pan and cook for 5 to 6 minutes until it is nearly cooked through. Finally, transfer the pan to the grill and cook for an additional 2 minutes until the top is golden and fully set. Serve and enjoy!
