Bacon, pumpkin and feta frittata

Satisfying frittata with pumpkin, basil, bacon, serves four for just $10.
Ingredients:
  • 400g Butternut pumpkin, peeled, coarsely chopped
  • 9.20 gm olive oil
  • 4 rindless bacon rashers, coarsely chopped
  • 1 small brown onion, finely chopped
  • 100g feta, crumbled
  • 6 eggs, lightly whisked
  • 20.00 ml shredded fresh basil
Instructions:
  • Boil the pumpkin in a medium saucepan of water until tender, about 8 minutes. Drain the pumpkin.
  • Heat oil in a 20cm non-stick frying pan over medium-high heat. Sauté bacon and onion for 5 minutes until onion is soft. Mix feta, egg, cream, and basil in a jug.
  • Preheat grill to high. Add pumpkin to the frying pan and stir to coat. Pour in the egg mixture and cook on low heat for 6 minutes until the edges are set but the center is slightly runny. Transfer the frying pan under the grill and cook for 3 minutes until the frittata is golden brown and set.
