Bacon, vegetable and lentil soup

Tangy bacon and lentil soup with a generous helping of healthy vegetables - a comforting winter meal.
Ingredients:
  • 18.20 gm olive oil
  • 400g packet chopped vegetable soup mix (see note)
  • 4 rashers shortcut rindless bacon, chopped
  • 250.00 ml red lentils
  • 3 large tomatoes, chopped
  • 765.00 gm vegetable liquid stock
  • 100g green beans, trimmed, chopped
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan over medium heat, heat oil until shimmering. Add vegetable mix and bacon, stirring occasionally for 3 to 5 minutes until vegetables begin to soften.
  • Combine lentils, tomato, stock, and 2 cups of cold water in a pot. Cover and bring to a boil. Reduce heat to medium-low and simmer for 15 to 20 minutes. Add beans in the last 5 minutes of cooking. Season with salt and pepper, stir in parsley, then serve.
