Try these tasty Bacon and Cheese Muffins for a perfect lunchbox treat.
Ingredients:
  • 4.60 gm olive oil
  • 2 rashers rindless bacon, finely chopped
  • 375.00 gm self-raising flour
  • Pinch ground cayenne pepper
  • 250.00 ml grated tasty cheese
  • 40.00 ml finely chopped fresh chives
  • 3 eggs, lightly beaten
  • 250ml milk
  • 50g butter, melted
Instructions:
  • Preheat your oven to 190C/170C fan-forced and line a 12-hole muffin pan with paper cases that hold 1/3 cup each.
  • 1. Heat oil in a medium frying pan over medium-high heat. Add bacon and cook until crisp, about 5 minutes. Remove from pan and let cool.
  • In a medium bowl, mix together sifted flour, pepper, cheese, chives, and bacon. Create a well in the center and add the remaining ingredients. Stir until everything is combined.
  • Scoop the mixture into the paper cases and bake for 20-25 minutes until they turn a lovely golden color and feel just firm to the touch. Let them rest in the pan for 5 minutes before transferring to a wire rack to cool.
