Flavorful spaghetti squash casserole, perfect for picnics and potlucks.
Ingredients:
  • 1 spaghetti squash, halved and seeded
  • 1 tablespoon olive oil
  • 1.5 cups shredded extra-sharp Cheddar cheese, divided
  • 0.75 cup bacon bits
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • Drizzle 1 tablespoon of flavorful olive oil inside the squash, ensuring a perfect roast. Then, lay the squash cut-side down on a baking sheet.
  • Roast in the preheated oven until the squash is fork-tender, approximately 30 minutes. Allow the squash to cool for 10 minutes before serving.
  • Prepare the casserole dish by greasing it.
  • Using a fork, shred the insides of the squash and place in a bowl. Mix in half of the shredded Cheddar cheese, bacon bits, butter, salt, and black pepper until fully combined. Transfer the mixture to the casserole dish.
  • Place in the preheated oven and bake until heated through, around 45 minutes.
  • Take the casserole out of the oven. Sprinkle the remaining Cheddar cheese on top and bake in the hot oven until the cheese is golden brown and bubbly, for another 15 to 20 minutes.
