Bacon and three-cheese cob

Impress guests with our decadent bacon and three-cheese cob loaf.
Ingredients:
  • 18.20 gm olive oil
  • 1 leek, thinly sliced
  • 250g triple smoked pan sized bacon, chopped
  • 40.00 ml plain flour
  • 160ml (2/3 cup) milk
  • 250ml Cooking Cream
  • 1 corn cob, kernels removed
  • 20g (1/4 cup) grated parmesan
  • 80g (1 cup) grated pizza cheese
  • 1 large cob loaf
  • 110g triple cream brie, chopped
  • Extra crusty bread, to serve
Instructions:
  • Preheat oven to 180C/160C fan-forced. In a medium heavy-based pan over medium heat, sauté leek in oil for 2 minutes. Add bacon and cook for 4-5 minutes until leek is soft and bacon is lightly colored. Sprinkle flour into the pan and cook, stirring for 1 minute.
  • Take the pan off the heat and pour in the milk, stirring until smooth. Add the cooking cream and return the pan to heat. Cook and stir for 3-4 minutes until the mixture boils and thickens. Fold in the corn, parmesan, and half of the grated cheese. Season with salt and pepper. Remove from heat.
  • Starting by hollowing out the cob loaf, lay a cross of two large foil sheets on the counter, then place a sheet of non-stick baking paper on top. Fill the cob with bacon mixture, half the brie, more mixture, the rest of the brie, and grated cheese. Put the lid back on, wrap it up in the baking paper and foil, and bake for 40 minutes until crispy and gooey. Enjoy with crusty bread for dipping.
