Effortlessly create succulent pork roast by wrapping it in bacon for an infusion of rich flavor.
Ingredients:
  • 1 pork loin roast (about 1 1/2 pounds or 680 g)
  • Salt and pepper
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons finely chopped fresh rosemary
  • 1/4 pound bacon (113 g), thinly sliced
  • 1 cup (236 ml) dry white wine
Instructions:
  • Remove the roast from the refrigerator and generously season all sides with salt. Allow it to rest at room temperature for about an hour before roasting to enhance the flavors.
  • Preheat the oven to a toasty 375°F (190°C).
  • Prepare the roast for searing: Pat dry the pork roast and season generously with pepper and a touch of salt. Heat olive oil in a skillet over medium-high heat until shimmery. Add the roast and sear all sides for about 10 minutes until browned. Remove and set aside.
  • Coat the pork roast in minced fresh rosemary and snugly wrap it with bacon slices, securing with kitchen string if needed.
  • For a delectable roast, settle the meat in a roasting pan, then let it sizzle in the oven at 375°F (190°C). Remember to generously brush with the pan juices while it cooks until the inside hits 145°F (63°C) on a meat thermometer, roughly 35 to 40 minutes.
  • Cover the roast with foil to keep it warm as it rests on a serving dish, ensuring it stays juicy and tender while you prepare the delicious pan sauce.
  • Prepare the sauce with the roast drippings: Place the roasting pan on low heat on the stove. Add white wine and scrape up browned bits with a flat edged spatula. Strain the drippings through a sieve into a saucepan, skimming off excess fat with a metal spoon. Simmer, then transfer to a gravy boat. Serve with the roast.
