Delicious rub enhances juicy lamb cutlets.
Ingredients:
  • 12 lamb cutlets, trimmed
  • tabouli, tzatziki, Lebanese bread, to serve
  • 15.00 gm sweet paprika
  • 20.00 ml ground black pepper
  • 7.50 gm Ground Cumin
  • 2 tsp ground coriander
  • 5.00 gm ground cinnamon
  • 2 tsp ground cloves
  • 1 tsp ground cardamom
  • 1/2 tsp ground star anise
  • pinch of ground nutmeg
Instructions:
  • Prepare the baharat spice rub by combining all ingredients in a bowl, then mix thoroughly.
  • In a bowl, mix together oil and 2 tablespoons of spice rub. Brush the mixture onto both sides of the lamb cutlets. Refrigerate for 30 minutes, if possible.
  • Heat up the barbecue plate on medium heat until sizzling. Grill the lamb for 3 minutes on each side for medium doneness or to your preference. Plate with tabouli, tzatziki, and Lebanese bread.
