Quickly make golden-brown Irish cream flavored cupcakes, top with whipped cream or frosting of choice.
Ingredients:
  • 0.5 cup butter, softened
  • 0.75 cup white sugar
  • 4 egg yolks
  • 0.75 cup sour cream
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 6 tablespoons Irish cream liqueur (such as Baileys®)
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Place paper liners in 12 muffin cups.
  • In a large bowl, use an electric mixer to beat the butter until light and smooth for 2 to 3 minutes. Add sugar and continue beating until the mixture is light and fluffy, for at least 5 more minutes.
  • Add the egg yolks one at a time, ensuring each yolk is fully mixed in before adding the next; incorporate the sour cream, vanilla, and almond extracts.
  • Combine the flour, baking powder, and salt by sifting them together in a separate bowl.
  • Gradually add the flour mixture to the liquid ingredients in three parts, alternating with Irish cream liqueur, until the batter is silky and well-combined.
  • Fill the prepared muffin cups with the batter.
  • Bake the cupcakes in the preheated oven for 15-20 minutes until they are golden brown on top and a toothpick inserted into the center comes out clean.
