Spicy fish tacos with crunchy slaw.
Ingredients:
  • 60ml (1/4 cup) fresh lime juice
  • Pinch of caster sugar
  • 45.50 gm olive oil
  • 1/4 white cabbage, cored, finely shredded
  • 1 carrot, peeled, coarsely grated
  • 4 radishes, ends trimmed, coarsely grated
  • 62.50 ml fresh coriander leaves
  • 1 1/2 tsp Mexican Chilli Powder
  • 500g white fish fillets, cut into 8 strips
  • 90g (1/3 cup) reduced-fat sour cream
  • 8 flour tortillas
  • 1 large ripe avocado, halved, stone removed, peeled, mashed
Instructions:
  • In a large bowl, mix together 2 tablespoons of lime juice, sugar, and 2 tablespoons of oil. Add the cabbage, carrot, radish, and coriander, and toss until evenly coated.
  • Season fish generously with chili powder. Heat the rest of the oil in a large frying pan over medium-high heat. Season fish with salt and pepper. Cook fish for 3-4 minutes on each side until it flakes easily with a fork. Transfer to a plate and cover with foil.
  • In a small bowl, mix together the sour cream and the rest of the lime juice. Warm the tortillas according to the instructions on the packet.
  • Evenly distribute creamy avocado on half of each tortilla, then layer on the crunchy cabbage mixture and flavorful fish. Serve alongside the tangy sour cream mixture.
