Crispy beer-battered cod tacos with creamy coleslaw, salsa fresca, and Mexican cheese - a taste of Baja!
Ingredients:
  • 6 medium tomatoes, diced
  • 1 small onion, diced
  • 0.5 cup chopped fresh cilantro
  • 2 tablespoons canned diced jalapeno peppers, or more to taste (juice reserved)
  • 0.5 teaspoon garlic salt
  • 0.5 medium lime, juiced
  • 3 cups coleslaw mix
  • 3 tablespoons ranch dressing
  • 2 cups vegetable oil for frying
  • 1 (12 fluid ounce) can or bottle Mexican beer
  • 1 (9 ounce) box batter mix (such as Shore Lunch®)
  • 1 pound cod fillets, cut into 2-inch chunks
  • 24 (6 inch) corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 12 lime wedges
  • 1 teaspoon Sriracha sauce, or to taste
Instructions:
  • Prepare the salsa by combining tomatoes, onion, cilantro, jalapeños, 1 tablespoon of jalapeño juice, and garlic salt in a bowl. Pour lime juice over the mixture, cover with plastic wrap, and chill in the fridge until ready to use.
  • Combine the coleslaw mix with tangy ranch dressing in a bowl; let flavors meld until ready to use.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • Combine the beer and batter mix in a bowl, then coat the cod in the batter.
  • Sear cod in batches in hot oil until golden brown and cooked through, about 4 to 5 minutes. Drain cod on a paper towel-lined plate using a slotted spoon.
  • Place corn tortillas in a damp paper towel and heat in the microwave on high for about 1 minute, until warm.
  • Place two tortillas on a plate, layer with cod, Mexican cheese, coleslaw mixture, and salsa. Finish with a squeeze of lime and a drizzle of Sriracha for added flavor.
