Delicious Baja shrimp tacos with crispy deep-fried shrimp, fresh red cabbage, cilantro, and a zesty spicy Baja sauce. Great for entertaining!
Ingredients:
  • 1 cup Mexican beer (such as Corona®)
  • 1 cup all-purpose flour
  • salt and ground black pepper to taste
  • 0.5 cup mayonnaise
  • 2 tablespoons chile-garlic sauce (such as Sriracha®)
  • 1 tablespoon mirin (Japanese sweet wine)
  • 0.5 cup canola oil, or as needed
  • 0.5 pound uncooked medium shrimp, peeled and deveined
  • 12 (8 inch) flour tortillas
  • 0.5 medium head red cabbage, cut into small strips
  • 0.5 bunch cilantro, chopped
  • 3 limes, cut into wedges
Instructions:
  • In a bowl, combine beer, flour, salt, and ground black pepper until well mixed. Allow the batter to rest at room temperature for 1 hour.
  • Prepare the Baja sauce by mixing mayonnaise, chile-garlic sauce, and mirin in a bowl. Chill in the refrigerator until ready to use.
  • Begin by warming the oil in a deep-fryer or large saucepan until it reaches 350 degrees F (175 degrees C).
  • Coat shrimp in batter and fry in hot oil until golden brown, around 2 1/2 minutes. Remove shrimp using a slotted spoon and place on a plate lined with paper towels.
  • Warm tortillas one at a time on a skillet over medium heat for about 1 minute until heated through.
  • Evenly distribute shrimp, Baja sauce, red cabbage, and cilantro onto each tortilla. Serve with lime wedges for garnish.
