Baja California-inspired baked chicken cheeseburger with zesty pepper Jack cheese, jalapeno, and bell pepper.
Ingredients:
  • 1 jalapeno pepper, halved, divided
  • 1 small red bell pepper, halved, divided
  • 1 small red onion, halved, divided
  • 2 pounds ground chicken
  • 0.25 cup chopped fresh cilantro
  • 1.5 teaspoons adobo seasoning (such as Goya®)
  • 1 teaspoon ground cumin
  • 0.5 teaspoon Mexican seasoning mix (such as Goya® Sazonador Total)
  • 8 slices pepper Jack cheese
  • 1 avocado, sliced
  • 8 tablespoons Mexican-style sour cream, or to taste
  • 8 hamburger buns, split
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Slice the jalapeno pepper, bell pepper, and onion into rings for topping, and set aside.
  • In a food processor, mix ground chicken and cilantro; season with adobo seasoning, cumin, and Mexican seasoning. Add the rest of the peppers and onion. Pulse until well combined. Shape the mixture into 8 burgers.
  • Arrange the burgers on a baking sheet lined with a drip tray.
  • After 20 minutes in the preheated oven, ensure the burgers reach an internal temperature of at least 160°F (70°C) using an instant-read thermometer. Top each burger with a slice of pepper Jack cheese, followed by onion, bell pepper, and jalapeno slices.
  • Generously spread Mexican sour cream on the hamburger buns. Add a flavorful chicken burger on top and enjoy right away.
