Mexican chopped salad with corn, black beans, avocado, tortilla chips, romaine lettuce, and zesty lemon dressing.
Ingredients:
  • 1 (12 ounce) package romaine lettuce leaves
  • 1 large tomato, diced
  • 1 avocado, diced
  • 1 pickling cucumber, diced
  • 0.75 cup crumbled feta cheese
  • 0.25 cup diced red onion
  • 0.25 cup white corn kernels
  • 0.25 cup cooked black beans
  • 0.25 cup crushed tortilla chips, or to taste
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 0.25 teaspoon ground cumin
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a spacious bowl, combine romaine lettuce, tomato, avocado, cucumber, feta cheese, onion, corn, and black beans. Toss ingredients until evenly mixed. Finish by sprinkling tortilla chips over the salad.
  • Combine olive oil, lemon juice, cumin, salt, and pepper in a bowl, whisk until smooth, then generously drizzle over the fresh salad.
