Vibrant Baja shrimp ceviche bursting with fresh celery, cilantro, zesty lime, and spicy jalapeno.
Ingredients:
  • 1 pound shrimp, deveined and chopped
  • salt and pepper to taste
  • 2 cups lime juice
  • 1.5 cups chopped white onion
  • 1 cup pickled jalapeno peppers and juice, divided
  • 2 cups grated carrots
  • 1 cup finely chopped cucumber
  • 1 cup finely chopped celery
  • 1.5 tomatoes, finely chopped
  • 0.33333334326744 cup finely chopped cilantro
Instructions:
  • Arrange shrimp in a deep serving dish, ensuring they are in a single layer. Season generously with salt and black pepper, then drizzle with lime juice. Allow the shrimp to marinate until they turn white, approximately 30 minutes.
  • Combine the onion and vinegar with the jalapeno peppers, allowing the flavors to meld for an additional 15 to 20 minutes.
  • Toss in jalapeno peppers, carrots, cucumber, celery, tomatoes, and cilantro. Allow ceviche to marinate for an additional 10 minutes.
