Elevated shrimp ceviche with parboiled shrimp marinated in zesty lime juice, mixed with spicy, refreshing vegetables.
Ingredients:
  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 0.5 medium red onion, diced
  • 2 serrano peppers, seeded and deveined
  • 0.25 cup chopped cilantro
  • 6 medium limes, divided
  • 1.5 teaspoons salt, divided
  • 0.5 teaspoon ground black pepper to taste
  • 0.5 pound raw shrimp, peeled and deveined
  • 1 small avocado, diced
Instructions:
  • In a bowl, mix together cucumber, tomatoes, red onion, serrano peppers, and cilantro. Season with 1 teaspoon of salt and a squeeze of lime juice. Gently toss to combine and let it sit.
  • Juice the rest of the limes into a separate bowl and sprinkle in the remaining salt and pepper.
  • Bring a small pot of water to a rapid boil. Add shrimp and cook for 45 seconds. Drain promptly using a strainer.
  • Dice the half-cooked shrimp and mix with the seasoned lime in a bowl. Allow it to marinate for 20 minutes. Add the cucumber mixture and garnish with avocado before serving.
