Spicy shrimp fra diavolo bursting with fresh tomatoes, white wine, and zesty lemon - perfect for entertaining!
Ingredients:
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons red pepper flakes
  • 1 tablespoon lemon juice
  • 3 vine-ripe tomatoes, seeded
  • 1 tablespoon butter, or to taste
  • 1 cup dry white wine
  • olive oil
  • 0.5 white onion, finely chopped
  • 2 cloves garlic, minced
  • 3 plum tomatoes, finely chopped
  • 2 tablespoons dried basil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
Instructions:
  • Combine shrimp, red pepper flakes, lemon juice, and salt in a resealable container or zip-top bag. Let marinate for 1 hour.
  • Blend ripe vine tomatoes until they form a smooth puree.
  • Heat butter in a frying pan over medium-low heat until melted. Add marinated shrimp and turn up the heat to medium. Stir and cook until shrimp are slightly browned on the outsides but not fully cooked, about 1 1/2 minutes. Remove shrimp from pan and set aside.
  • Deglaze the pan with a generous splash of white wine, using a wooden spoon to scrape up the flavorful browned bits. Drizzle in olive oil and saute the onion until translucent. Mix in garlic and cook briefly. Add the rest of the wine and simmer until reduced by half.
  • Stir in the pureed tomatoes, plum tomatoes, basil, parsley, and oregano into the sauce. Lower the heat to medium-low and simmer while stirring occasionally until flavors blend, for about 25 minutes. Return the shrimp to the pan and cook until heated through, around 5 more minutes.
