Irresistible party shrimp dip: Combine pink shrimp, lemon, scallions, herbs, hot sauce, cream cheese, and mayo for a zesty and creamy delight.
Ingredients:
  • 8 ounces cream cheese, room temp
  • 1/4 cup mayonnaise
  • 2 to 4 Tbsp of lemon juice (2 if regular lemon, 4 if Meyer lemon), more to taste
  • 1 teaspoon finely grated lemon zest
  • 3/4 pound cooked, shelled, small pink shrimp (salad shrimp)
  • 1/4 cup sliced scallions, including the greens
  • 2 Tbsp finely chopped fresh parsley
  • 1/4 teaspoon Tabasco or Crystal hot sauce
  • Freshly ground black pepper to taste
Instructions:
  • Mix until creamy: Combine cream cheese and mayonnaise in a medium bowl, then blend in lemon juice and lemon zest until smooth. Whisk if needed.
  • Combine the shrimp and cream cheese mixture in a food processor and pulse three times for 1 second each. If you prefer not to use a food processor, finely chop the shrimp and mix it into the cream cheese.
  • Mix together the scallions, parsley, hot sauce, and black pepper. Adjust the seasonings with more lemon juice if needed. Chill the mixture before serving with crackers or vegetables.
