Baked Alaska mince pies

Indulgent ice cream mince pies with a playful twist and toasted meringue topping. Make the meringue just before serving for the perfect sweet treat.
Ingredients:
  • flour for dusting
  • 300 g shortcrust pastry
  • 300 g mincemeat
  • 2 egg whites
  • 100 g caster sugar
  • 1 small tub good-quality vanilla ice cream
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Roll out the pastry on a floured surface until it's 4mm thick. Cut out 10 circles of the pastry to line the tart tins. Spoon in the mincemeat and bake for 20 minutes until golden and bubbly. Let cool on a wire rack. Whisk egg whites and sugar until stiff peaks form. Top each mince pie with ice cream, meringue, and brown quickly under the grill before serving.
