Baked apple puddings with white chocolate custard

Cozy up with a delicious baked apple and custard dessert to impress at your next winter gathering.
Ingredients:
  • 8 Jazz apples
  • 84.98 gm milk
  • 75g butter, chopped
  • 1/2 tsp vanilla bean paste
  • 62.50 ml plain flour, sifted
  • 75.00 gm self-raising flour, sifted
  • 53.75 gm raw caster sugar
  • 180.00 gm brown sugar
  • 2 star anise
  • 2 cinnamon sticks
  • 257.50 gm milk
  • 252.50 gm pure cream
  • 4 egg yolks
  • 10.00 gm cornflour
  • 70.95 gm raw caster sugar
  • 190.00 gm White Chocolate Melts
  • 20.00 ml brandy (optional)
Instructions:
  • Preheat the oven to 180C (160C fan-forced).
  • Cut off the top quarter of the apples and set it aside. Using a sharp knife and a teaspoon, remove the cores while keeping the flesh and base intact. Score the skin around the middle of the apples.
  • In a microwave-safe jug, combine milk and 25g butter. Microwave on HIGH for 30 seconds until butter is melted. Stir in vanilla. In a bowl, mix flours and caster sugar, then create a well. Pour in the milk mixture and stir until smooth. Place 1 level tablespoon of batter in the center of each apple and top with the apple tops.
  • In a large flameproof roasting pan, combine brown sugar, spices, water, and remaining butter over medium heat. Stir for 5 minutes or until smooth. Bring to a boil, then add apples to the pan.
  • Bake without covering for 35 to 40 minutes, brushing with syrup halfway through, until apples are soft.
  • While waiting, prepare the White Chocolate Custard: Combine milk and cream in a saucepan over medium heat. Heat for 3 to 4 minutes, stirring constantly until warm (avoid boiling). In a heatproof bowl, whisk together egg yolks, cornflour, and sugar until smooth and pale. Gradually pour in the warm milk mixture. Return the mixture to the saucepan and add the white chocolate. Cook and stir for 10 minutes until the custard thickens. If desired, stir in brandy. Serve the apples with syrup and this luscious custard.
