Baked bluefish fillets with zesty lemon, white wine, butter, and herbs in foil.
Ingredients:
  • One bluefish fillet (1/2 pound to 1 pound)
  • Kosher salt
  • Freshly ground black pepper
  • 3 to 5 very thin slices of fresh lemon
  • 3 pats of butter (about a teaspoon each)
  • Several sprigs of fresh herbs such as tarragon, thyme, fennel fronds, and/or parsley (or a teaspoon of dried herbs such as Italian seasoning or Herbes de Provence)
  • 3 tablespoon dry white wine
  • 2 tablespoon lemon juice
Instructions:
  • Heat the oven to 350°F.
  • Prepare the roasting pan: Lay a piece of foil in the roasting pan large enough to wrap the bluefish fillet. Ensure the fillet is skin-side down on the foil after rinsing it.
  • Season the fillet generously with salt and pepper. Cover it with a layer of delicate lemon slices, place butter pats evenly on top, and finish with a beautiful arrangement of fresh herbs.
  • Wrap the fish in foil, ensuring a tight seal to prevent any liquid from escaping. Pour white wine and lemon juice over the fish before crimping the foil edges together securely.
  • Bake the fish at 350°F in the oven or on the grill in a foil packet for 15 to 20 minutes, until it is cooked through and opaque.
  • To serve, gently transfer the fillet from the foil to a serving dish, then drizzle the flavorful cooking liquid over the fish before serving.
