Bake herbed chicken thighs, potatoes, and crispy bacon in a delicious casserole.
Ingredients:
  • nonstick cooking spray
  • 6 slices bacon
  • 4 pounds Yukon Gold potatoes, cut into wedges
  • 2 pounds boneless chicken thighs
  • sea salt and ground black pepper to taste
  • 0.33333334326744 cup olive oil
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish with cooking spray.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Drain the cooked bacon on paper towels.
  • Spread out the potatoes evenly at the base of the baking dish. Season chicken thighs with salt and pepper, then place them on top of the potatoes. Drizzle olive oil over the chicken, sprinkle with thyme and rosemary, and finish by scattering crumbled bacon on top.
  • Roast in the oven until the chicken is fully cooked and the potatoes are soft, approximately 1 hour.
