Savory baked chicken thighs with mushrooms and onions, ready in just 35 minutes.
Ingredients:
  • 1.5 pounds boneless chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil, divided
  • 8 ounces white mushrooms, sliced
  • 4 cloves garlic, smashed
  • 1 teaspoon herbes de Provence
  • 1 medium onion, cut crosswise into 6 rings
  • 0.5 cup dry white wine
  • snipped fresh chives or parsley for garnish (optional)
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Gently pat thighs dry, then coat both sides of the chicken thighs with a flavorful mix of garlic powder, onion powder, salt, and pepper.
  • In a 12-inch nonstick oven-safe skillet over medium heat, heat up 1 tablespoon of olive oil until shimmering. Add seasoned thighs and sear until golden brown on both sides, about 3 minutes per side. Transfer thighs to a plate to keep warm.
  • Pour the remaining tablespoon of olive oil into the skillet. Sauté mushrooms for 2 minutes, then toss in smashed garlic cloves and herbes de Provence. Cook for an additional minute while stirring continuously.
  • Arrange mushrooms to one side of the skillet, add 3 onion rings, then nestle a browned chicken thigh on top of each onion slice. Create space in the skillet by moving the mushrooms, then add the remaining onion rings and chicken thighs.
  • Once the onion rings and chicken thighs are arranged in the skillet, evenly scatter the mushrooms around. Drizzle white wine over everything and cover with a lid.
  • Bake the skillet in the preheated oven until chicken thighs are fully cooked and thermometer reads at least 165°F, about 15-20 minutes.
  • Plate each succulent chicken piece alongside a flavorful slice of caramelized onion and a generous portion of savory mushrooms. Finish with a sprinkle of freshly cut chives or vibrant parsley for an elegant touch.
