Crispy, healthy fries with Progresso panko crumbs for extra crunch, served with warm marinara dip.
Ingredients:
  • 1 cup Progresso™ panko crispy bread crumbs
  • 1 teaspoon crushed red pepper flakes
  • Salt and pepper
  • 1 egg
  • 1 medium eggplant, peeled, cut into thin strips
Instructions:
  • Preheat oven to 450°F and prepare a cookie sheet with parchment paper or a silicone baking mat.
  • Combine bread crumbs, pepper flakes, salt, and pepper in one shallow bowl. In a separate shallow bowl, whisk the egg. Dip eggplant strips into the egg, ensuring all sides are coated; shake off any extra. Roll the eggplant strips in the bread crumb mixture until fully coated, then place them on a cookie sheet.
  • Bake for approximately 20 minutes, flipping halfway through, until the coating is crisp and golden brown.
