Crispy oven-baked eggplant slices, a delicious twist on a classic side dish. Customize with your favorite seasonings.
Ingredients:
  • 3 teaspoons olive oil, divided
  • 2 cups dry unseasoned bread crumbs
  • 0.5 cup grated Parmesan cheese, or more to taste
  • 0.25 teaspoon garlic powder, or to taste
  • 0.25 teaspoon dried oregano, or to taste
  • 0.25 teaspoon dried basil, or to taste
  • salt and ground black pepper to taste
  • 1 splash water
  • 1 eggplant, peeled and sliced into 1/4-inch rounds
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with aluminum foil and lightly coating it with 1 teaspoon of olive oil.
  • In a shallow dish, mix bread crumbs, Parmesan cheese, garlic powder, oregano, basil, salt, and pepper. In another shallow dish, whisk eggs with a splash of water.
  • Coat eggplant slices in egg mixture, then press into bread crumb mixture to coat both sides. Place on baking sheet and drizzle remaining 2 teaspoons of oil over the slices.
  • Bake in the preheated oven for 20-25 minutes until golden brown. For a crispier finish, broil until desired color is achieved.
