Easy VEGEMITE baked ‘fried’ rice recipe

Elevate your fried rice with an umami VEGEMITE, sweet honey, and plum sauce drizzle.
Ingredients:
  • 300g (1 1/2 cups) brown rice
  • 2 tsp grated fresh ginger
  • 20.00g (2 tsp) VEGEMITE Squeezy
  • 2 tsp sesame oil
  • 625ml (2 1/2 cups) salt-reduced vegetable stock or water, boiled
  • 2 carrots, peeled and coarsely grated
  • 150g snow peas, sliced
  • 75g (1/2 cup) roasted, unsalted cashew nuts, chopped
  • Shallots, sliced diagonally
  • 57.20 gm honey
  • 77.40 gm plum sauce
  • 20.00 ml rice vinegar
Instructions:
  • Preheat your oven to 200C/180C fan forced. Spread rice in a 30cm x 20cm baking dish. Sprinkle garlic, ginger, VEGEMITE, and oil over the rice. Pour in stock and mix well. Cover the dish tightly with foil and bake for 45 minutes.
  • Prepare the sticky sauce by mixing all the ingredients together in a bowl or jug and set aside.
  • Uncover the dish, stir in the carrots and snow peas, tightly cover with foil, and continue cooking for an additional 10 minutes.
  • Unwrap the dish and toss the foil. Create 4 wells and crack an egg into each. Gently beat each egg with a fork without blending into the rice. Drizzle with sweet sauce. Pop back in the oven and bake without covering for 7-10 minutes until eggs are cooked through.
  • Break the egg into the dish using a spoon. Mix well to combine and season with salt and ground white pepper to taste.
  • Sprinkle cashews and shallots generously before serving.
