Elevate your pasta bake with a unique twist using VEGEMITE for a deliciously different take on a family classic.
Ingredients:
  • 500g packet short pasta
  • 36.80 gm vegetable oil
  • 200g broccoli florets
  • 200g Swiss brown mushrooms, sliced
  • 60g salted butter
  • 40g (1/4 cup) plain flour
  • 515.00 gm milk
  • 20g (1 tbsp) VEGEMITE Squeezy, plus extra for drizzling
  • 240g (3 cups) coarsely grated light tasty cheese
Instructions:
  • Preheat your oven to 200C/180C fan forced, and generously grease a 2.5L (10 cup) baking dish.
  • Prepare the pasta in a large saucepan of salted boiling water according to the packet instructions. Ensure you drain it thoroughly.
  • In a spacious frying pan, heat oil until sizzling, then toss in broccoli and mushrooms. Sauté for 2-3 minutes until mushrooms turn golden and broccoli gets a slight char. Combine with pasta.
  • Place the frying pan over low heat, melt butter, then add flour and stir to combine. Slowly pour in the milk and whisk until smooth. Mix in VEGEMITE and 1 1/2 cups of cheese. Gently fold in the pasta. Transfer everything to a baking dish, sprinkle with cheese, and drizzle with VEGEMITE if desired. Bake for 30-35 minutes until golden and bubbly.
