Make cheesy vegemite scrolls for a fun school lunchbox twist.
Ingredients:
  • 300.00 gm self-raising flour
  • 30g butter, chilled, chopped
  • 193.13 gm reduced-fat milk
  • 20.00 ml Vegemite
  • 187.50 ml grated reduced-fat tasty cheese
  • Reduced-fat milk, to glaze
Instructions:
  • Preheat oven to 220°C/200°C fan-forced and line a baking tray with baking paper. In a bowl, sift flour and rub butter into it with your fingertips until it resembles breadcrumbs. Create a well in the centre and add milk. Stir with a flat-bladed knife until a soft dough forms, adding more milk if needed. Turn the dough out onto a lightly floured surface and knead gently until smooth, being careful not to over-knead.
  • Roll out the dough into a 30cm x 20cm rectangle. Evenly spread Vegemite over the dough, leaving a 1cm strip along one long side. Sprinkle cheese over the Vegemite. Roll the dough up tightly. Place the rolled dough on the baking tray with the seam-side facing down.
  • With scissors, make 3cm cuts along the top of the dough without cutting all the way through. Gently pull the slices to the sides. Brush with milk. Bake for 20 to 25 minutes until golden. Serve and enjoy!
