Try this unique Aussie twist on easy quiche with Vegemite!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 150g baby spinach
  • 3 eggs, at room temperature
  • 20.00 ml Vegemite Squeezy
  • 99.00 gm self-raising flour
  • 342.48 gm milk
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and generously grease a 4cm-deep, 24cm round fluted quiche dish.
  • In a large frying pan, heat oil over medium heat. Saute the onion for 4 to 5 minutes until softened. Toss in the spinach and cook for 1 minute until wilted. Take off the heat and let it cool for 5 minutes before using.
  • Combine eggs and half of the Vegemite in a large bowl and whisk until well mixed. Add flour and milk, and whisk until fully combined. Gently fold in the spinach mixture and cheese, then season with pepper.
  • Transfer mixture into the prepared dish. Dollop the remaining Vegemite on top. Bake for 40 to 45 minutes, or until golden and set in the middle. Allow to rest for 10 minutes before serving.
