Baked Eggplant with Tomatoes, Oregano, Olive Oil, and Parmesan - a flavorful and tender dish.
Ingredients:
  • cooking spray
  • 1 eggplant, sliced into 1/2-inch-thick rounds
  • 3 tomatoes, sliced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon oregano
  • salt and ground black pepper to taste
  • 0.33333334326744 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to 400°F (200°C) and generously coat a baking dish with nonstick cooking spray.
  • Layer the eggplant and tomato slices in the prepared baking dish. Drizzle with olive oil, sprinkle with oregano, salt, pepper, and top with Parmesan cheese.
  • Bake in the preheated oven until the cheese is golden brown, approximately 30 minutes. Switch the oven to broil on high and continue baking until the top is fully browned, around 5 minutes.
