Indulge in a cozy weekend breakfast of baked eggs smothered in delicious melted cheddar cheese.
Ingredients:
  • 30g butter
  • 1 bunch English spinach, trimmed, washed, dried
  • 2 garlic cloves, crushed
  • Melted butter, to grease
  • 2 green onions, thinly sliced
  • 35g cheddar cheese
  • 4 large free-range eggs
  • 80ml cream
Instructions:
  • 1. Preheat your oven to 180°C. 2. In a large frying pan over high heat, melt the butter until it foams. 3. Add spinach and garlic, cooking for 2-3 minutes until the spinach just wilts, tossing occasionally. 4. Remove from heat and season generously with salt and pepper.
  • Grease four 3/4-cup (185ml) ramekins with butter. Evenly distribute spinach among ramekins. Top with green onions and cheddar. Gently add cracked egg to each ramekin. Pour cream over the top, avoiding the yolk. Season with salt and pepper.
  • 1. Arrange the ramekins in a roasting pan and fill the pan with boiling water until it reaches halfway up the sides of the ramekins. Bake in the oven for 8-10 minutes, or until the egg white is set and the yolk is still runny, or to your desired doneness.
  • Take the ramekins out of the oven and serve promptly with buttered toast, if desired.
