Crispy roasted fennel, the shining star of your meal.
Ingredients:
  • 1.5kg fennel, trimmed
  • Sea salt and freshly ground black pepper
  • 80ml (1/3 cup) olive oil
  • 40.00 ml dried breadcrumbs
  • 40.00 ml grated parmesan
Instructions:
  • Preheat the oven to 200°C (180°C fan forced).
  • Prepare the fennel by removing the outer layers and cutting the bulbs into segments. Wash them thoroughly before boiling in salted water for 8 minutes.
  • Dry the fennel segments thoroughly and arrange them in a lightly oiled baking dish. Season with salt and pepper, drizzle with the majority of the olive oil, and toss until evenly coated.
  • Pour the breadcrumbs into a wide shallow bowl and combine them with the Parmesan. Top the fennel with this mixture, drizzle a touch more olive oil, and bake for 15 minutes or until the breadcrumbs form a beautiful golden crust.
